At Belse, the New Vegan Brewery on the Bowery
Belse, the Texas-based vegan brewery and restaurant, is now in business on the Bowery.
The Lone Star State transplant – officially, Belse Plant Cuisine – takes 11,000 square-feet at 265-267 Bowery, in what was previously the fleeting home of the Paulaner Brauhaus brewery. The renovated space features three sections – a restaurant, bar, and Garden Room.
The big-box vegan establishment actually has ties to Los Angeles, though, as its owners and operators are also behind the wildly successful Little Pine. (Its core founder, Moby, departed the restaurant in 2020.)
Helmed by executive chef Anthony Spino, the menu features plant-based options such as pizzas, flatbreads, cheeses, soups, and salads. Belse also serves its onsite-brewed beers, wines, and other cocktails. (The business owns a vegan winery in Healdsburg, California.)
